Lemon Garlic Ghee Baked Fish

Baking fish with ghee is an easy way to boost the healthy fat content of your meal while adding a nutty buttery depth of flavour to your dish.

INGREDIENTS

4 white fish fillets (hake, cod, halibut etc.)

4 garlic cloves, minced

4 tbsp Booley Ghee

2 lemons

2 tbsp fresh parsley, chopped

Course sea salt

Freshly ground black pepper

METHOD

  1. Preheat the oven to Gas Mark 6, 200°C.

  2. In a small saucepan, melt the ghee with garlic, zest and juice of 1 lemon, parsley and salt and pepper.

  3. Place the fish on a lined baking tray - season to taste.

  4. Pour the lemon ghee mixture over the fish.

  5. Top with sliced lemon.

  6. Bake for 12-15 minutes or until fish is flaky.

  7. Serve with remaining fresh parsley and drizzle with lemony buttery sauce.
