About Booley Foods
What?
Booley ghee is a clarified butter made from 100% Irish butter. With similar properties to coconut oil, ghee is a healthy fat with a very high smoke point (>210C).
With its buttery, nutty and smooth flavour, ghee is the perfect alternative cooking oil to traditional butter, olive, rapeseed and even coconut oils when roasting, frying or baking. Or why not try mixed into rice or couscous, on roasted vegetables and meats or even spread on breads and pancakes.
Who?
Booley Foods is an Irish food company based in Ferbane, Co. Offaly.
Our mission is to modernise Irish pantry staples, starting with a range of grass-fed clarified butter oils (ghee), speciality flavoured butters and buttercreams.
Booley - where old Irish traditions merge with new world flavours and tastes!
Why?
The name Booley is derived from the term Booleying, an old Irish term for transhumance, the Agricultural tradition of taking cattle up to higher grounds to graze on fresh green pastures during the summer months.
During this period, family members resided alongside the livestock in temporary dwellings known as Booleys. After milking the cows, and while they returned to graze, families would prepare butter and cheese for the winter months ahead, storing it in the ground to preserve it. And while the transhumance tradition has since died off in Ireland, with remnants of Booley huts found in Kerry, the Burren, Tipperary, Achill and Antrim, where the tradition was most popular, Irish butter is still produced with the practice in mind and referred to as summer butter, giving rise to its superior quality, distinct yellow colour and rich creamy taste.
